Homemade Pesto Fusilli 🌿 🍅
This dish makes us appreciate the power of just a few simple ingredients. Fresh is key 🔑
We mashed 4 tablespoons of pine nuts and 3 garlic cloves in a mortar before then adding them to a hand blender together with 2 cups of basil, 4-6 tablespoons of pure olive oil, a good sprinkle of parmigiano reggiano and a pinch of salt and pepper.
Once smooth, we set this aside. We then sautéed some chopped onions and cherry tomatoes in a pan with some olive oil. Once onions are translucent and tomatoes have broken down, we added the homemade pesto and used some pasta water to thin it out.
The finished product is rich and creamy. Especially if you garnish with some more cheese and pine nuts.
