Pumpkin Risotto is a hearty and comforting vegetarian dish which is easy to make and requires only a few simple ingredients 👌🏻🤤

Recipe making 4 portions 👇

✔️400g arborio rice
✔️ 1 large onion
✔️ 4 garlic cloves
✔️ 450g to 500g chopped pumpkin
✔️ 1 litre vegetable stock
✔️ Parmesan
✔️ Salt and pepper
✔️ Pumpkin seeds

Start by cooking the onion and garlic in a pan. When the onion becomes translucent, add the chopped pumpkin and season with salt and pepper.

When the pumpkin is cooked through, transfer the mixture in a bowl and blend using a hand blender until a pureed.

In the same pan, add the uncooked rice and stir over medium heat for around one minute. Add the pumpkin mixture to the rice and stir. Then add the stock one ladle at a time, stirring constantly, until the rice is cooked al dente.

Stir in the grated parmesan and adjust seasoning according to your liking. Serve with pumpkin seeds if desired 👌🏻
