We decided to give the classic apple pie recipe a bit of a twist by including dates πŸ‘ŒπŸ»πŸ˜‹

Both apples and dates are naturally sweet so we found ourselves adding less processed sugar which is always better πŸ™ŒπŸ»

Recipe making 3 pies:

Apple filling:

πŸ₯§10 apples, peeled, cored and thinly sliced
πŸ₯§1/4 cup of granulated sugar
πŸ₯§2 Tbsp of lemon juice
πŸ₯§1/3 cup of all purpose flour
πŸ₯§2 tsp of cinnamon
πŸ₯§1 tsp ground cloves
πŸ₯§1/2 tsp mixed spice
πŸ₯§Pinch of salt
πŸ₯§2 tsp vanilla extract

Date filling:

πŸ₯§250g pitted dates, roughly chopped
πŸ₯§1 cup water
πŸ₯§ 2 tsp vanilla extract

In a large bowl, toss together the apples with the sugar, lemon juice, flour, cinnamon, ground cloves, mixed spice, salt and vanilla and set aside for 15 minutes.

Meantime, put the dates, water and vanilla extract in a saucepan over low heat. Mix continuously and let simmer for around 5 minutes until a thick paste has formed. Add more water if needed.

Preheat the oven to 190 Celsius.

To assemble the pie, place some of the apple filling in a prepared pie tin with pie crust (remove any excess liquid that may have collected). Then, swirl some of the date mixture. Repeat this step until the pie tin is filled.

Add another pie crust on top and brush the surface with milk.

Bake the pie for around 45 minutes until the pie has turned into a golden colour πŸ‘ŒπŸ»
