These peanut butter and honey oatmeal bars are the ultimate go-to healthy breakfast or snack 🥜🍯 They are packed with nutritious ingredients and are high in protein and fibre ✔️They are also free from processed sugar but are naturally sweetened with honey 🍯 which can also be substituted with maple syrup or agave for a vegan option 🤗
The flavours of the honey and peanuts together are such a good combination and the crunchy texture makes these oats bats heavenly delicious👌🏻🤤
The below recipe makes 12 bars and is adapted from halfbakedharvest
✔️3 cups oats
✔️1 cup rice crispies cereal
✔️1/4 cup chopped peanuts (we used salted peanuts)
✔️1/2 teaspoon baking soda
✔️1/3 cup honey
✔️1/2 cup peanut butter (check out our posts to make your own)
✔️2 tablespoons coconut oil
✔️1 teaspoon vanilla extract
Preheat the oven to 180c.
In a bowl, mix the oats, rice krispies, peanuts and baking soda together. In a separate bowl, mix the honey, peanut butter and coconut oil together and microwave until combined, then add the vanilla extract.
Add the wet ingredients into the dry ingredients and mix until combined. Press down the mixture into a baking dish with parchment paper and bake for 20 to 25 minutes until golden. Cut into bars once the mixture has cooled down a bit but is still a little soft
